Guaranteed dip demolition.

One of my favourite party pleasers - the triple layered dip.
If you serve this one up with your choice of biscuits and/or bread, guests won't even miss the non-existent cheese platter! The beauty of this dip is that the lemon and lime juice preserve the contents, allowing you to prepare the day before, giving you one less thing to organise on the day/night before your guests arrive.
FIRST LAYER:
1 can of whole chickpeas, drained. (save the liquid/aquafaba instead of tipping it down the drain as this is a great replacement for eggwhites in cooking.)
2 garlic gloves, crushed.
1 Tbs of tahini.
Juice of 1/2 a lemon.
Salt to taste
1. Place ingredients into food processor/ blender and blend until smooth. Add extra lemon juice and salt if you feel the need. If you find that the hummus is not a smooth enough consistency, add a small amount of aquafaba to the mix and blend as required.
2. Evenly spread your hummus mixture into your desired dish/bowl to create the first layer.
SECOND LAYER:
3 diced tomatoes.
1 whole diced red onion.
1/2 a cup of diced coriander.
1 tbsp dried mixed herbs.
Salt and pepper to taste.
1. Mix contents in a bowl.
2. Evenly distribute into your dish ontop of layer one, being careful not to mix the two layers together.
THIRD AND FINAL LAYER:
2 avocados.
Juice of a half a lemon.
1/2 tsp ground cumin.
1/2 tsp of chilli flakes (feel free to alter depending on your spice threshold).
Salt and pepper to taste.
1. Place all ingredients in a bowl and smash with a fork until mixed thoroughly.
2. Evenly distribute mix into dish creating your final layer.
3. Top with your choice of Coriander, chilli flakes, dukkah and/or salt and pepper!
